Cashew, lime & apricot balls

Makes 12 balls

These are so delicious, do not skip the zest of lime, it makes you feel like you are on a tropical beach getting ready to jump in the ocean!

INGREDIENTS

1/2 cup dried apricots

1/2 cup raw cashews

1/2 shredded coconut (unsweetened)

Zest of 1 lime

1 TBSP of water

Pinch of sea salt

INSTRUCTIONS

  1. Combine everything together in a food processor.

  2. Process until well combined and creates a big blob.

  3. Wet your hands and roll mixture into 12 balls (about 1 tablespoon = each ball)

  4. Set them on a plate and keep in the fridge.
